Immigrants  took advantage  of the economic and social  freedom offered  to them in the west  to sell their own food thus Indian, Thai and Chinese  restaurants are common in the west..

Thai food has in the past been pretty bad in Australia. Too sweet and mild. A bit like a lot of tourist restaurants in Thailand. They would say 'That's what people want'. Now it's getting better but you need to be careful.

They're probably right that's what most people want but there is still a market for the minority that don't. In the US at Thai places catering to most most every customer has a super sweet condensed milk Thai tea. That'll coat your mouth so much that the flavors of the food matters even less.
