Cooking home made chips / fries

Almost given up on the potatoes here for chips. They are delicious for anything else but they just don't fry well. Usually soggy and oily

 

I cut some up tonight, about medium size and par cooked them in the microwave for 8 minutes with a bit of water. Shook them around in a bag of flour and into the oil.

Came out superb, brown and crispy. Next time I will try add some flavor to the flour, maybe some herbs, paprika. Give them a try 🙂

Garlic powders a great idea

Frozen chips cooked under the oven grill.......nothing like chip shop chips fried in 'proper' lard, but perfectly palatable.

Only found out last week that they still contain quite a lot of fat....... there to help them cook!!!

Way back when I ate a bag of tasty lard fried pork rinds, yummy! It gave me severe constipation for a few days. My wife said I shouldn’t eat more than a couple a day, her cousin had a stroke and a friend of hers had a heart attack after eating too much. The stuff really is dangerous.

Are you sure about that? I thought they used beef dripping.  Wouldn't get any Muslim customers cooking in pig fat.  (That said, wouldn't get any Hindu customers cooking in beef fat.)

Made these the other day, random spuds from CP Fresh, blanched then twice fried in canola.  Came out pretty well.

Yes your right....dripping improves the taste compared to lard.
