I'm guilty of drinking water right up to bedtime. I have to stop.

I've managed to quit that now. I'm already following the intermittent fasting regime, having finished eating by 6pm. But I was getting annoyed at having to make multiple trips to the bathroom at night.

Not anymore. My fasting now includes drinking of any kind and now I only need to pee once during the night.

I do occasionally feel dehydrated when I wake up to pee, in which case just a small sip of water, maybe half a glass, is enough to see me through the night.

As mentioned by @newbee2022 above, my sleep is much improved.

I eat three full meals a day, drink 3-5 liters of tea or water every day (I confess I do pee often during the day but not at night,) and drink a large mug of tea in the evenings.  I go to sleep around 11:30, fall asleep almost instantly (which really pisses off my wife,)  and wake up with the sunrise.
At 78, this works well for me.

For a 78 year old, you're doing very well.
