Texas has some very top wines, seeing it's in a semi arid environment. They grow in certain areas with cool nights, and limestone soil that drains well. Higher elevations also, in the Hill Country and High Plains areas. Hot afternoons followed by sharp drops at night produces sugars and maintains acidity. With global warming this will likely be used in other places.
