If you live and work in Thailand and want to get her a tourist visa it is easy. All you need to do is submit the application along with supporting documents, go for a brief interview and you will have it the same day (if I remember it correctly). If you don't work in Thailand I have heard that they are a bit tougher.

The last time I was in the British Embassy (albeit some time ago) there was a 12 week waiting list for interviews. This has most likely changed now but I would be suprised if she would get an interview on the same day of application.
