There was at least one thread about this in the Chiang Mai sub-forum, so worth taking a look there. As I recall, AUA in CM was well-liked.

AUA Chiang Mai is time and money well-spent.

I have no personal experience of their regular courses, but I have many recommendations and no complaints so far.

Phayap University's Thai language course also has good reputation.
