Get your wife/GF to buy some local beef and she'll chop it fine for you. We do it all the time - even for chilli con carne. No probs.

Hamburgers.

For Hamburgers buy the best cut available at any of the big markets in Ubon for 120 - 130 baht a kg and they will mince it for you on the spot.

Just to follow up, I agree that the best option is to go to a market, choose your cut and have it minced there for 130b/kilo. I've tried the ground beef from Makro & Big C and it's not very good. Lotus beef looks like it's been sitting out for days.
