I'm trying to explain the concept of Kundalini to my thai gf but its harder than I thought.

No, there is no Thai concept of Kundalini Yoga, because the Traditional Thai Massage use this concept as the Teaching of Jivaka, the doctor of the Buddha. Kundalini Yoga is one part

of the holistic system of Nuad Bo Rarn.

Many Thais practice yoga of various kinds, and know the word 'Kundaline' well. They use the same Sanskrit word for that and also use 'chakras' in this context.
