I still can't face ripping off my wabbit's ears................ Easter Bunny -chocolate- whatever!

My sister brought me a choccy Easter Bilby - the Aussie version of the bunny we're meant to consume avariciously at Easter, but.......... I can't do it!!!!!!!!

The label says " May contain traces of peanuts & other nuts" , so that's ENOUGH for me...........

DO NOT EAT WABBITS!!!!!!! Understand?

NO! YES!

Here's another one of my favourites for preparing dead wabbit:

Baked Wabbit In Sour Cream

Rabbit is fried then baked with sour cream and onion.

INGREDIENTS:

1 medium wabbit, cut in pieces

1/2 cup flour

salt and pepper

3 tablespoons margarine

1 cup minced onions

2 cups sour cream

PREPARATION:

In a food storage bag combine cup flour with 1/2 teaspoon salt and 1/4 teaspoon pepper. Add wabbit pieces and shake to coat with flour mixture. Heat oven to 325°. Heat margarine in a cast iron skillet; sauté wabbit until browned on all sides. Pour off excess fat. Add onions and sour cream, cover, and bake at 325° for 1 hour.

Serves 4.

Or try this fancy dead wabbit dish:

Rabbit Coq Au Vin

8 wabbit thighs

Salt

Freshly ground black pepper

2 cups plus 2 tablespoons flour

1 egg

2 tablespoons milk

12 ounces bacon chopped

1 pint pearl onions, peeled

¼ cup chopped shallots

2 tbs. chopped garlic

1 tbs. chopped fresh thyme

2 bay leaves

3 cups fruity Wine

2 cups brown chicken stock

2 tbs. butter

1 tbs. finely chopped parsley

1. Season the wabbit with salt and pepper.

2. In a shallow pan, add 2 cups of the flour.

3. Season with salt and pepper.

4. In another shallow bowl, whisk the egg and milk together. Season with salt and pepper. Dredge the wabbit in the seasoned flour.

5. Dip the wabbit in the egg wash, letting the excess drip off. Dredge the wabbit back in the seasoned flour, coating completely.

6. In a large hot oven proof skillet with a lid, render the bacon until crispy about 6 to 8 minutes. 7. 7. Remove the crispy bacon from the pan and reserve.

8. Lay the wabbit skin side down in the hot bacon fat and brown the rabbit for 3 to 4 minutes on each side. Remove the wabbit from the pan and set aside.

9. Add the onions to the bacon fat and sauté for 2 minutes.

10. Add the mushrooms, shallots, and garlic, sauté for 2 minutes.

11. Season with salt and pepper. Add the thyme and bay leaves.

12. Add the wabbit to the vegetable mixture. Add the wine and chicken stock.

13. Bring the liquid up to a simmer and cover. Cook the wabbit until very tender about 30 to 35 minutes skimming off the fat. Remove the wabbit pieces from the pan and set aside. Blend the remaining flour and butter together into a smooth paste. Whisk the paste into hot liquid. Bring the liquid to a simmer and cook for 3 to 4 minutes.

14. Add the wabbit back to the pan and continue to cook for 5 minutes. Stir in the parsley. Season with salt and pepper if needed. Serve the Coq Au Vin in individual bowls with crusty bread.

15. Garnish with the reserved crispy bacon. Yield: 4 servings

Lots of other ways to cook your dead wabbit. This one's double the fun because it calls for two dead wabbits:

Colonial Rabbit

2 wabbits, sections

Flour

1 tbs. olive oil

1 can chicken broth or stock

½ onion, diced

3 carrots, peeled and coined

3 bay leaves

1 clove garlic, pressed

1 small can tomato paste

¼ cup very cold water

2 tbs. flour

4 tbs. currant jelly

½ lb. mushrooms, sliced

1. Flour meat and brown in skillet with oil.

2. Remove meat from pan. Add chicken broth and bring to a boil.

3. Stir in onion, carrots, bay leaves and garlic and simmer for 20-30 minutes.

4. Add tomato puree and continue to simmer.

5. Remove ¼ cup broth from pan and combine with water and flour, mixing until smooth. Return wabbits to pan.

6. When wabbits are cooked through, remove from mixture.

7. Strain the mixture to catch bones.

8. Sauté mushroom and add to broth or serve on the side. Servings 4-6

I've been thinking about putting together a wabbit safari in Guatemala. :D

Maybe my tasty recipes have put the fear of Elmer Fudd into him, too. :D Haven't seen hide or hare of him lately. :o

Suegha, this isn´t he rain thread, you know, where we talk about weather and things. I mean, honestly,this is a SERIOUS THREAD, and if you can do no more than balbber ficional lies about 30 degress in Liverpool (Really??) than you might as well do something useful like, skin up the next roach, or else GET BACK IN Khall´s or the colonel´s CLOSET!!!!

As I said, was many moons ago back in the Land of Yellow Brick Roads.... the beginnings of cellular -hydro technology in the plant world and hungry tigers were involved.. That's all I have to say about that. Suegha is not invited. :o
