I'm a subscriber to Truevisions Gold. If one is planning to move around a bit in Bangkok, maybe rent an apartment for a couple of months then move to another for a few months, can one keep one's subscription and access the Gold channels at one's new residence?

depends on your set up, but you can take your set top box with you and they will install it at your new place but charge you for the pleasure.

According to True there's no charge for installing at the new address but I can't cancel for 6 months. Maybe someone can help with this. A lot of apartments offer free "UBC" which I believe is the same thing as Truevisions. Could I bring my set-top box to one of these apartments and have True install it? I have asked in a few apartments but most of them have no idea.
