I think it's safe to assume that 3G link is better protected than your S3 can ever be :)

It's possible to use sniffer at the APN side (owned normally by the operator), but not between your phone and the True network (eg. the airlink).

I guess all the operators have legal interception ports to their networks, which will give government authorities access to sniff the data by request.

Obnote. Then there is of course this.. but I would not think it to be an practical problem

cellphone connections (gprs,3/4G,calls ) have a whiff of encryption. but this is quite okay if you encrypt your network stuff with for example tor, orbot, https everwhere or ssl
