I want to also be able to create folders to sort the mail,

I no longer do because I'm semi-retired and email a fraction of a fraction of what I used to use, but if I was to need to again, keeping it locally (provided, of course, you realise you're assuming responsibility for maintaining a backup) beats ANY online option.

Use Thunderbird as the mail client on your PC.

Then you can define your own folders and store the mail

as it comes in from Gmali. or any other service
