There is a Vietnamese dish, that uses a thing wrap, they are so thing quite often you have to soak them in water to separate them. You then stuff them with various items that come with the dish, a type of sausage is one, garlic another and I believe chillies. You roll it, dip it in sauce and eat it. It is very good, but I don't know the name, anyone know the name?

Right. And if the rice paper is stuffed with a certain mixture of crab, shrimp, mushrooms, etc., and is deep fried it is the famous Vietnamese delicacy Cha Gio which is dipped into a delicious sauce made with Nuoc Mam (fish sauce.) BTW, the various Vietnamese restaurants in Orange County, CA are probably better than many in Vietnam.
