What is your nationality, as you're posting from the UK I'm assuming you might be British?

If you are entering Thailand as a British Citizen you will be allowed in for 30 days without a visa, though you should present a return ticket out of Thailand within the 30 days. You would need to show this when checking in for your flight when leaving the UK.

If you intend flying to Cambodia and/or Vietnam, both will require visas.

You can apply for a visa on arrival for Cambodia https://www.gov.uk/foreign-travel-advice/cambodia/entry-requirements and also for Vietnam, there are a number of websites offering visas on arrival for Vietnam but see the warning from the Vietnamese Consulate in the UK http://vietnamembassy.org.uk/index.php?action=p&ct=Consular%20Services%20for%20UK%20residents I have, however, never heard of anyone experiencing a problem with these services.

Returning to Thailand you will again be allowed in without a visa, but have evidence of your flights out of Thailand available when checking in.

I would normally have moved your post to the Thai Visa Forum, but as you intend travelling to neighbouring countries I will leave it where is.
