If someone has a UK leave to remain visa - what other destinations don't require an additional visa other than Ireland and Switzerland?
You are correct that a Thai passport holder who has a UK visa valid for more than 6 months can visit Switzerland for up to 3 months without a Swiss visa.

However, you are, I'm afraid, wrong about Ireland!

Holding a UK visa, of any type, does not exempt a Thai from needing a visa to visit the Republic of Ireland. They do not, of course, need a seperate visa to visit Northern Ireland as that is part of the UK.
