I could go for a pickled egg...

mind, I don't know how ye can get a pickling jar into yer fridge...

I made some a few years back and they were quite good, met a bar/pub standard...the recipe called fer the eggs to be studded with cloves and I left that out...just let the jar sit somewhere in the house that's cooler fer about 2 weeks...ate them all innabout 2 - 3 days and then decided not to do them again as there would be a cholesterol problem...

tutsi is in a village pub (hanging baskets and everything) and steps up and sez: 'pint of bitter, 2 pints of lager and 2 pickled eggs, please...' and then a fat woman perched onna barstool inna bouffant with a fag and a short skirt looks over and sez: 'ICK!!!...'

she was unfriendly...

The gf made this tonight, from her mom's recipe.
IMG_6963.JPG

Looks good and smells delicious, but it's so sweet I can't eat it, meanwhile the gf is tucking in like there's no tomorrow !!

My wife makes that 2 or 3 times a month though it isn't sweet. However it is yummy.

Yeah, i was kind of disappointed as it smelt and looked great.
She said it's how her mother makes it which would explain the mothers extra kilos !!
She says it's called " pa-lo " ( excuse my spelling )

Garlic & Dill Pickles

Cucumbers & Green tomatoes

Onion, sliced

Fresh Dill Sprigs

6- 8 Garlic cloves, smashed

4 small red chilies

1 3/4 cup White Vinegar

2 1/4 Cup Water

4 Tbs Salt

2 Tbs Sugar

1/2 Tsp Dill Seed

1/2 Tsp Mustard Seed

1/2 Tsp Coriander Seed

1/2 Tsp Celery Seed

1 Tsp Peppercorns

Stir water, vinegar, salt and sugar together in a container until salt and sugar are dissolved; add spices and mix well.  Some people boil & cool this before using, but I think it doesn't make much difference in the finished product, so I don't.

Arrange Dill sprigs, onion slices, cucumbers & green tomatoes in a canning jar, and then drop in garlic cloves; do this in layers.

Add the water, vinegar & spices mixture until jar is filled to rim. Put the lid on the jar and give it all a good shake. Refrigerate for 1 week; shake daily.

For Naam: there are millions of recipes and basically, you can trow in any spice/herb you like.

However, if you are trying to come close to the typical German "Gurkentopf taste", use only dill seeds, mustard seeds and some peppercorns in a mixture of 60/40 water/white vinegar. Add sugar to taste.

lookin' at this one fer tonite:

https://mealz.com/recipes/the-flexi-foodie-aubergine-and-cauliflower-curry

there's a lady down the market that has green, red and yellow peppers fer sale occasionally...set the green one aside fer spaghetti sauce later and use the red and yellow fer the recipe...she pre wraps them in an assortment of colors and folks around here buy them...

lookin' at the preparation and believe I'll do the masala (garlic, ginger, tomatoes and spices) on the side and then add to the stir fried onions and veges for final cooking...might add a diced tattie or 2 for a more robust mixture as they don't really flavor anything and go well with the cauli...get them creative juices flowing...

gonna get some garbanzos (chick peas) soakin' tonight for use later...bought them a few months ago at foodland in BKK, never seen them available anywhere else...maybe curry them with cauli and toms or make hummous with homade tahini...they're very versatile...

it's cool...I'm only suggestin' that fer those of us that gots the leisure and convenience (my local market is a 12min walk from my doorstep) to get out and about, meet yer neighbors and see what the vendors got to eat...the market offering might not appear to be much but with recipes on the internet and some imagination the culinary world is yer oyster...head on down to the nearest makro and check out the spice section, they gots loadsa stuff that you wouldn't expect to have available...

and I'm trine to concentrate on recipes for which ingredients are available locally...wanna stay away from truffles, sun dried tomatoes, balsamic vinegar, artichokes etc...ain't got no use fer that stuff when ye live in rural SE Asia...

beats ham sarnies and instant noodles and the bowel movements sure are good...

bon appetit...

khaao thom is a great brekkie but in my case only when someone that knows what they're doin' is makin' it...my MiL makes the best khaao thom muu and she's got a trick that after 15 years of observing her I still haven't figured out yet...

this one turned out OK...not a huge success like the cauli and potato soup that I described before but OK and serviceable leftover fer brekkie or anytime with some toast...did the vegs and masala separate like I described and combined with a splash of hot water from the kettle...left out the tatties...used the local phallic green eggplant/aubergine which I feel is an acceptable substitute fer the european purple ones...same texture and flavor...

also threw in 6 medium seeded red chiles and ground to a paste with the garlic and ginger...still wary of the little chiles, they are super hot and so small that ye can't remove the seeds...if yer not careful they'll burn ye a new <deleted>...

the sweet peppers give it a nice tang, try doing an american spaghetti sauce (not bolognaise) with and without green pepper to see what I mean...

got them garbanzos/chick peas soakin', let's see what tomorrow brings...gotta get some more onions, etc...

'Mr tutsi! am I so attractive that you visit my vegetable stall multiple times every week?' 'ye got a nice ass fer a 40 y.o. woman, babe but I'm more interested in yer onions...'

tutsi is up front,  western and cruel...

A vegetarian one tonight: ravioli stuffed with an artichoke filling and topped with a lemon cream sauce and Parmesan cheese.

If you like pasta's, a pasta maker is really a 'must have' in Thailand

went up to the changwat today to do a 90 day report and swung past the big tescos and makro to pick up little goodies not available in my humble sub - district...

and as we approached the local MacDonald's the step daughter who was drivin' said: 'burger time, tutsi?' I was in hog heaven hookin' down the Crespo pitted green olives and said: 'fergit it babe, head home (30km away) and step on it...stop at a sebben so I can get some ice and somethin' to mix the vodka with...'...

oh, pitted green olives and vodka and movin' on down the road!...there's gotta be a song somewhere...
