Hat Yai is very safe.

The only real safety concern is in being run over. Songkhla and Satun provinces are generally fine. Problem areas are off to the southeast.

Generally, you would be fine..  don't draw attention to yourself, be restful and you'll be fine.. RPG'd  Newbie... they don't do it that way, too expensive, and why waste it on "you"   if.. the way it will be done.. beware of tandem motorcycle riders.
