I arrived in Thailand 9th November on a single entry 2 month visa issued by Thai consular in Liverpool, earlier in year I got a 6 month visa two entry but they don't do them anymore .

this is my dilemma , I return to UK 27th March and was advised in Liverpool to get one month extension 9th January at immigration office the on 8th February fly out of country to loais or Vietnam or Penang stay there for 20 days they re enter Thailand which will give me another 30 day visa which should take me to 27th march.

Is this the only way to deal with my problem?

I normally only visit for 2 months twice a year and never have this problem but this year my sons have pissed me off so much with their arguing that I decided not to go home for Christmas but thought there were still 6 month visa

Please advise the best way to deal with this problem.

Am based in Ubon for some of the time

You could get another single entry tourist visa in Laos or Vietnam.

Or you could leave and re-enter the country to get a 30 day visa exempt entry and extend it for 30 days.

So let me get it straight you are saying I get an extend on my existing visa on Jan 9 bringing me to Feb 9 then leave country and return  with a 30 day visa exempt entry which brings me to March 9 approx and then get another extend to bring me past the 27th leaving day

Have I got that right ?

You could get a 30 day visa exempt entry when the 30 day extension of your 60 day entry ends. Then you could apply for a 30 day extension of the 30 day visa exempt entry.

Sorry meant to say do I then fly somewhere like Penang or I go over border by bus

You can do it by air or overland at at a border crossing.

You only have to be out of the country long enough to enter the other country, turn around and come back.

Which border crossing you would use will depend upon where you are living. Some are better than others.
