Copha for Chocolate Crackles

Hi All

My wife wants to make chocolate crackles for the kids and is looking for Copha which is required to make them.

We have been to Yok, Rimping and Tops and they dont seem to stock it.

I would have thought Yok had it as it is a baking specialist.

 

Does anyone know where we could buy Copha in CM?

Maybe its known by another name, in NZ we used Kremelta.  I havent seen the stuff about but then I havent had the need for it.  Im sure someone will have it as all it really is is coconut 'fat' or a type of vegetable shortening.

 

Im very suprised Yok doesnt have this as they are perhaps the biggest supplier of baking comodities.  Id be inclined to go back and ask about coconut fat or vegetable shortning.

 

Chocolate crackles....my god that brings back childhood memories. Never had a kids birthday party without them!

Copha is produced only in Australia.

In New Zealand, it is marketed as Kremelta.

Known in Europe as coconut fat, it is marketed as Palmin.

In the United States it is not readily available, not surprised you can't find it in Chiangmai.

 

Solidified Coconut Oil, which is what Copha basically is, should be available.

I seem to recall a homemade treat like this as a kid in the U.S. and wondered how our moms turned it out without Copra, Kremalta or even solidified coconut oil, which I don't remember my mom buying (Crisco and lard yes, but not anything with coconut oil).

By "rice bubbles", I assume they mean what we call "Rice Krispies".  Note the use of "compound chocolate" which is cheaper than pure chocolate and already sweetened and mixed with vegetable oil.  No wonder U.S. moms liked this recipe.  Basically they melted Hershey bars, mixed in coconut and then Rice Krispies, if I'm reading the recipe correctly.
