Som tum - green papaya salad, with beans, peanuts, chilli and fish sauce. A really great cheap dish in food courts, street stalls, local restaurants. Make sure you ask for it not spicy or it will take your head off, even when you ask for it not spicy it will still have a good kick. Phonetically ask for som dum (mai ped)

I like fried food, but fresh spring rolls are (imho) much better than fried.

I can’t say and don’t care if they are healthier...

Yesterday, I tried the dried squid snack. I think it's Bento (not really sure). It's sweet and spicy at the same time and i really, really like the taste. 

My favorite Thai dish is Jup Chai, but I think it originated in China. It tastes like collard greens and ham-hocks, but can have tofu and other vegetables in it - if you get it in a restaurant. The stuff you buy at the market tends to be just vegetables.
