The UK Visa allows her to enter UK only, the good thing is that it is multiple entry so she can enter UK again when she returns from her trip to Europe. You will have to apply for a Schengen visa to visit Europe. The Schengen visa will allow you to enter a country and travel freely between countries that have entered in the Schengen agreement. France and Holland are part of that agreement, UK is not.

You should apply for the Schengen visa in her country of residence at the embassy of the country where you will enter from the UK or where you will spend the most time. If you are a UK citizen the good news is that it will be free for your spouse.
