So, most posters on here are ex-pats living in Thailand or posting from abroad, I do know there is a section you can post about foreign food, but nobody posts a recipe, so let's. post all our recipes here. No matter what it is. let start a cooking adventure and share your recipes 

Meatloaf with fried egg. Not too demanding. Optionally add ketchup.

I remove the plastic wrapper and unfold the bag as shown in the instructions. Once in the microwave I push the 'popcorn' button, and about three minutes later I have steaming hot popcorn flavored with artificial butter. I prefer to eat it from a bowl so my hands don't get messy reaching into the bag.

Finally found nice big tomatoes in Thailand.  And made stuffed tomatoes and peppers.

Relatively easy to make

Cut the top of the tomato, keep it on the side.

With a spoon scoop the inside of the tomato , tacking care not to brake the skin.

Do the same with a few peppers because you will end up with more filling that you have tomatoes. 

As you scoop the tomatoes place the scoops in a food processor,with salt and pepper, an onion cut in pieces, dill, and I like to ad a spoon full of mushroom stock powder for extra taste, but if you don't like . you don't need too. Ohh and dont forget a bit of olive oil, 

After processing the tomatoes' onions and things , place the blend in a pot, mix a cup  of rice and half a kilo of ground pork . The actual recipe calls for ground beef, but this being Thailand, I had pork (I grind my own  i don't like the store bought)

So now you see why you will end up with more fill than tomatoes, I actually like the Peppers better, anyway, In fact if you can't find good tomatoes to do this, some times I process those small tomatoes and just fill Peppers. 

I like to parboil the small tomatoes and remove the skin, 'cause I don't like the skin, But up to you. 

Anyway, I cook the filling in the pot for 15 minutes to get is stated, then fill the tomatoes, and papers and placing the top of the tomatoes and peppers as a lid, to keep the moisture inside and cook the rice. 

I also put some of the extra fill around the tomatoes and peppers. 

Cover the whole thing with tinfoil , and bake at 350 F for 45 minutes, the remove the tinfoil and bake for another 15 minutes, checking to see if the rice is done, If you feel it is not done the way you like it, bake it a little longer.

If the tomatoes and peppers are not getting caramelised on the to as in the picture move the pan closer to the top burner in the oven , but keep an eye on it so that it does not burn like I did to the one pepper , top right, but it was still good. :smile:
