Which countries will you be visiting? If all of your ports-of-call will be at countries which are in the Schengen area, she will require just the one visa.

My plan is to take a cruise that departs England and visits France, Spain, Portugal and Italy.

So, I guess we need UK visa and Schengen visa from France.

Yes, your g/f will require separate visas for the UK and the Schengen area. Whether this is difficult will depend upon her circumstances in Thailand. That she is single does not necessarily hinder things, providing that she can demonstrate that she'll leave Europe at the end of her trip. Integral to the visa applications will be your ability to show that you can pay for the holiday, and demonstrate the length of your relationship. I wouldn't book her ticket up front, just in case she doesn't get the visa, but if you were able to provide a copy of the intended itinerary for the visa officer to see, that would be of assistance.
