My GF has applied for a fiancee visa, did it a few weeks ago.

We have decided that it might be better we get married in Thailand in a few weeks though, is it possible to change the visa status application once its submitted?

All that will be different is from Fiance to Spouse.

Im a bit reluctant to ask the embassy this just yet until we have decided 100% we know how fragile things can be.

You did not mention which embassy. If it is the US embassy, there is a big difference, and it would be in your benefit to NOT legally marry in Thailand before heading to the States. You can still have a Buddhist ceremony in Thailand, just don't register at the Amphur to make it legal. This is what my wife and I did. As far as we are concerned, that is the day we got married, not the day we went to the courthouse in the US to make it legal.

Not sure if there is a benefit either way for other embassies.

If it's an application for the UK then it makes little difference as the rules governing fiancé(e) and spouse applications are almost identical. Just inform the embassy that you've married and provide your marriage certificate in addition to all of the supporting documentation that you would have supplied for the fiancé(e) visa.
