Iam correct in thinking that having obtained a yrs multi entry O visa, every time I leave the country, upon re-entry It would be stamped with a further 90days.

Iam thinking of going to Cambodia or Vietnam, after only 1 week of 1st entering Thailand. So upon re-entry I would get a further 90days from then.

But the original start date still applys for the 1 year visa.

Your understanding that you can exit/enter at any time and get a 90 day stay stamp is correct. But the visa has a validity period rather than a start time and end time so you could get visa and make first entry with it next year. And if your present visa expires on July 3 you could enter on July 2 and get 90 days stay stamp also.
