making chili?? I remember we were talking about recipes and when I saw this it came to me that this was my "secret" ingredient to sweat the veg

I got my local butcher to trim the fat as you described, I made some nice suet. That in turn made lovely Christmas Pudds and Mince pies, you need to process. Render to remove all the blood and gristle, slowly.

Yeah !! Someone who knows what Tourtiere is .... Meat Pie and not the British sweet " Mince meat Pie" ... The real and only French Canada Quebecquois Meat Pie and yes Beef Suet is a must for it ... Have yet to see it in Chiang Mai but if anybody has .... Pleeaase let me know cause Xmas is around the corner and I dying to make my Traditional Quebecquois Meat pies ...:rolleyes:

Rimping did have Atora Suet some time ago,but I havnt seen it recently.

A suet crust meat pie is delicious.

not forgetting dumplings too!

David, now you've done it, I'm longing for a really great stew with suet dumplings..............followed by suet pudding, golden syrup and custard. One million calories and counting!!

Custard is really really easy.....

cornflour

milk

sugar

vanilla flavour

yellow colour

stir while heating

If you render the beef fat, you end up with dripping

which is much softer than suet. I think suet is just grated kidney fat!
