I am interested to know more about Buddhism.

Is there a such a thing as a Buddist Bible or are any scriptures available online or something?

The Buddhist "bible" is the Pali Canon, but it's huge and not that helpful for a beginner. Much of it (often with commentary) is available at Access to Insight but you'd be better off starting with a "Buddhism in a Nutshell" type of thing.

If you want to understand it in terms of how many Thai's practice Buddhism, the links above may confuse you.

As others have said, the actual practice is a combination of Buddhism, Annam ism, superstition and other influences.
