I want to make Indian bread at home but I

other flours that I can buy locally to make something like Atta flour.

i make mine with,

wholeweat and all purpose flour.

a little olive oil and some cold water.

use a wooden spoon to make a dough.

use a good heavy pan or a bakestone.

i used 3 wholeweat to 1 all purpose but taste and try first.

i also like to add onion powder and garlic powder.

Can`r recommend anything in Chiang Rai but Atta and any other flour available in Bangkok at a shop at first floor at Rembrandt hotel Sukhumvit soi 20.

The price is about 180 THB per 5 kg bag for Atta flour. Maida flour a bit more expensive.

for those of you that make yer own chapattis do you add some baking soda to the dough mixture or not? I've seen with and without on google but I'd like to get the local consensus...

 

I use 3/1 or 2/1 wheat to all purpose flour but the product isn't nice like the canteen food in construction camps in saudi...I must be doing something wrong...if I use a tsp of baking soda then it turns out like a flour tortilla...considering all the permutations when using wheat flour what have you observed?

 

recently made some without baking soda and they were a treat with garbanzos in an east asian curry (fresh ginger, red curry paste and coconut milk and green peppers)...but they sent my fasting blood glucose thru the roof which you wouldn't expect with mostly wheat flour...
