All paperwork is checked several times, incidentally, but not taking too long.

Leaving, I assume its just passport and PCR test and vaccine certs, right?

Get a beer before you go through immigration!! None the other side.

Go to the far right on departures, to the convenience store there. I sat around there. Completely empty.

That's only place I could find!!

Nothing open on the air side at all. Just the usual hi-so Rolex shops etc. Certainly no beers.

It was my wife flying into Thailand, and she left Thailand around 6 weeks ago, so I wouldn't be sure that exit requirements are the same now. But coming in they wanted to see every document she was carrying, even at two different desks before the actual immigration officer's desk. But she did say it was smooth and not terribly time consuming.

The airlines lounges are, otherwise the place looked mostly deserted, albeit i was on a very late/early morning flight.

I was flying Qatar and i can say they had some lovely 20 year old Tawny Port and a cheese platter which made the two 7 hours flights fly by so to speak. Probably for the passengers around me it was less enjoyable.
