I'm looking for a recommendation for a immunologist around Bangkok in the field of autoimmune diseases.

Guillain-Barre syndrome is extremely unlikely  and a person with it would usually end up in an ICU rather fast.  Various symptoms related to immune system response/over response are fairly common after vaccination however. Most are self-limiting.

 

It can also happen that an underlying pre-existing autoimmune disease, which may have been in remission or at sub-clinical levels, flairs up in response to vaccination. (Which is not a reason to not vaccinate - people with autoimmune conditions are at elevated risk of severe disease if they get COVID). This too will usually resolve on its own with time.
