Hed Phor Hunt: Mushroom Fever Grips Nakhon Ratchasima

In the province of Nakhon Ratchasima, Thailand, a unique mushroom frenzy has gripped local residents. Armed with everyday spoons and ladles, they're invading the forests on a diligent hunt for the elusive hed phor, a local delicacy often referred to as the false earthstar or barometer earthstar. This spiky mushroom famed for its unique texture and distinctive flavour can command up to 500 baht per kilogramme in the market, creating a mushroom rush akin to the 19th-century gold rush.

 

Following continuous rainfall, Makha Hill in Ban Nong Bot, situated in Khok Krasian, has become a hotspot for these mushroom gatherers due to the sudden proliferation of hed phor. The mushrooms, virtually the size of a thumb, stay concealed under the soil, only the patches of cracked earth revealing their presence. Using spoons or ladles, the bounty hunters swiftly dig up the concealed fungi, often discovering clusters in one location.

 

According to one local, Nok Banhanbut, the demand for these mushrooms in the community greatly outweighs the supply, even with the high price tag. Despite the potential for profit, residents often choose to keep their harvest, savouring the infrequent opportunity to enjoy the distinct and delicious taste of hed phor in their meals. This year, they enjoy a particularly fruitful season, making every trip to the forests worthwhile.

 

Hed phor can add a unique kick to an array of traditional dishes, from soups and curries to spicy salads like larb and various stir-fried dishes. With its rich and crumbly texture and the rarity of its appearance, the hed phor mushroom adds a touch of luxury to the communal table, making it a truly sought-after delicacy amongst food enthusiasts. As the mushroom fever continues to spread across the province, the spoons and ladles of Nakhon Ratchasima show no signs of resting.
