It's actually shorter to go that way also.  The long flights from Asia to New York go far north over Alaska and northern Canada which is shorter than if you go the other way and route through the middle east closer to the equator.

I like the idea of departing at a civilized time of the morning where Ive had a good nights sleep prior. Then arrive in the States at night time and get to sleep at 11pm in the 5 star hotel. Jetlag is less the next day perhaps?

For ultra long-haul, non-stop, especially from and to NE Asia but the actual routing on the day still depends on the (forecast) winds.

Singaore Air has a direct flight from SIN to either EWR or JFK.    It’s 17 to 19 hours of flying time.

That's a tough requirement.

Browsed through the 30 fastest connections and only AirCanada via Vancouver does 787 on both legs (can't see whether  "-9").

 

Starts with long leg:

 

8:35 AM to 6:55 AM (13h 20m)

 

8:40 AM to 4:51 PM (5h 11m)

 

Others do 787 only on short leg within Asia.

I would definitely recommend not to transit in Canada.  All transit passengers on international flights arriving in Canada need to go through Canada immigration and customs.  If the OP's family is Thai, they may even need a transit visa for Canada.  Much better to choose one of the many airlines with easy transit airports.

Back when Thai had the non-stops from BKK to LAX & JFK, the LAX flight went over the Pacific, and the JFK flight went over the Atlantic. 

 

I'm sure they go whichever way is cheaper, and the cheaper way, is the faster way.

Depending on how often you plan to fly, once I made gold on Emirates, I got lounge access for two and I got upgraded quite often. They even upgraded all three of us once (LAX-DXB) and I was the only gold card.

I did the LAS-SIN nonstop once, not sure if they still have it, but that was good service.

Most of the airlines mentioned have a fairly modern business class seat but a few routes have old crappy business class seats, hardly worth the money so beware.  

 

Here is a random day in April to New York on Turkish.  All four flights are the old business class (A330 and 777).  I'd only fly it if it were significantly cheaper.  Also if something goes wrong their customer service isn't great in my experience.  Emirates still flies some old configurations as does Korean Air and maybe others.  One of the Korean Air daily flights to New York has the old configuration (the A380).

How can I check if it will be a new or old plane? Ive had a few business class flights on thaiair that were dated planes. I was disappointed. How do I check this. Is it only by calling the airline?

For ones that fly from Bangkok to JFK or Newark these all pretty much have newish to top of the line business class seats -

ANA, Japan Airlines, EVA, Singapore, Etihad, Cathay Pacific.  For a couple of these there might be older business class on your connecting flight within Asia but the long flights should be good.  Another option is connecting on an Asian carrier then Delta, AA, or United for the longer flight.  All the US airlines have newish seats.

 

These should have new or acceptable the majority of the time but not guaranteed

Qatar, Emirates, KLM, Air France, Asiana, Finnair, Lufthansa.

I'm not aware of an easy way to tell about a particular route since some have schedule changes throughout the year.  You could post here, or in a Reddit thread for the particular airline, just provide the dates and flight numbers.  Or Google something like (Turkish business class seats review) and limit the search to the last couple of years to get an idea of what is on offer.  Calling the airline is probably the worst option since they may be clueless or give you incorrect information.
