Any recommendations for a garden centre to the north of Bangkok where I can buy larger plants (but not full grown trees)? Some trees in my garden have just become too large and need to be replaced, and the local plant places only have small plants.

We go here. Very helpful after the floods of 2011. The garden centers have all you will need at great prices but you have just over an hours drive up to Nakorn Nayok. I think you can figure it out from the screenshot.
