The context is processing 10 - 15kg of fresh cow organs that we buy every week or so to supplement our dogs' dried food. We cook the offal in a large pot of water, allow it to cool then slice it up, bag portions with some of the "soup" and freeze. It costs us about THB 30/ kg.

 

Anyway, I get bored doing the same thing over and over, so I always look for a way to speed it up. The above slicer looks like it might help, but I have no experience using such a thing. Maybe it's better at raw than cooked. Maybe some type of organ slices nicely but others do not etc.

 

I've seen contraptions that look like paper guillotines, but that is not much different than using a knife. I don't want to shell out for something with a motor attached as that costs way more.
