Once immersed in a life of survival on the streets, Nguyen Chien Thang's journey from a tumultuous childhood to becoming the head chef at ST25 by KOTO, a high-end restaurant in Ho Chi Minh City, is both remarkable and inspiring. At just nine years old, Thang was deeply entangled in the chaotic life of gang involvement and social ailments, delivering lottery numbers in the narrow, bustling alleys of Cho Lon, Ho Chi Minh City's Chinatown. Despite the risks, including an incident where he was thrown into the Tau Hu Canal during a gang fight, Thang's resilience and determination guided him through these challenging conditions.

Growing up without a father, Thang followed his blind mother from Ben Tre in the Mekong Delta to Ho Chi Minh City. Their life was nomadic and unstable, leading to Thang's placement in a shelter at the tender age of five. His interactions with his mother were scarce, lasting only a few days every few years. As private orphanages faced funding shortages in the early 2000s, children like Thang struggled to find food and shelter during the day, often resulting in street crime and other survival tactics. Yet, amidst hardship, there were glimmers of humanity that left significant imprints on Thang's heart.

His early life was a tapestry of challenges and fleeting moments of kindness. While he delved into street gangs, scavenged for goods, and committed petty theft, Thang also encountered caring individuals. A drug addict's warning, urging Thang not to follow a similar path, and an elderly woman's consistent offers of food, were poignant reminders of compassion. These interactions played a crucial role in preserving his sense of humanity during those tumultuous times.

At the age of 11, Thang was taken to a state-run social protection center in District 8, providing a semblance of stability amidst the chaos. Initially, he was resistant, attempting to escape several times, but the harsh realities of hunger and violence outside the center eventually anchored him there. Nguyen Tri Linh, the center's manager at the time, described Thang as a unique individual – outwardly defiant, but inwardly diligent and hardworking. These traits, forged during his time on the streets, resurfaced as he frequently helped in the kitchen, honing a craft unknowingly.

Thang’s education was interrupted as he left school after completing grade seven, turning to various odd jobs to sustain himself. His career in hospitality sparked from a brief stint as a shoeshine boy at a three-star hotel. Recognizing an opportunity to break free from his past, Thang applied to KOTO, a social enterprise that provides vocational training in hospitality. Initially daunted by the prospect, he embraced this opportunity as his last chance to avoid returning to a life of hardship.

During his interview with KOTO, Thang, burdened by the shadow of his past, kept his head bowed with shame. However, he was moved by a recruiter’s empathy who said, "When you're hungry, you eat. When you're attacked, you fight back. That's a survival instinct, not your fault." This moment was transformative, allowing Thang to shed the inferiority stemming from his past and the resentment towards relatives who had rejected him.

After graduating with honors in 2015, Thang's career flourished as he worked in several prestigious five-star hotels in Ho Chi Minh City and Phu Quoc. Armed with newfound confidence, he even embarked on a philanthropic motorcycle journey across Vietnam, raising funds for his alma mater. This experience of helping others, he noted, was instrumental in his healing journey, as it highlighted the struggles of many more disadvantaged individuals.

In July 2025, after years of dedication and climbing the culinary ladder, Thang returned to KOTO as the head chef of ST25 by KOTO. This role symbolizes a full circle to his roots, blending his past experiences with his present achievements. Reflecting on his life, Thang acknowledges the preciousness of his current circumstances, cherishing his roles as a husband, a father, and a supportive son to his aging mother. His remarkable transformation from street life to culinary leadership stands as a testament to resilience, the power of community support, and the importance of opportunities.

Through Thang's journey, his story inspires as a beacon of hope, demonstrating the strength of the human spirit to overcome adversity and the transformative impact of compassion and opportunity.

What an amazing story of this you man's battles from street urchin to his position now as head chef in a prestigious restaurant. My admiration for him is boundless. To go through what he has at such a young age and not only survive but to really make something of his life is amazing. I wish him every success in the future.
