Switching from Pixel to iPhone

For a number of years I've been using Google Pixel mobiles. Google's inability to provide a reliable speech to text service forces me to switch to iPhone. All my documents in the form of emails or documents hot exclusively relying on google services such as Gmail Google Docs etc etc. Can anyone with being through this process give me an idea of what to expect in terms of problems and perhaps in telegram Style explain how to go about the transfer from Android to iOS.

No personal experience on my part but my wife switched from a phone using the Android operating system to an iPhone last month and says it's like having to learn a new language. She is in Bangkok at the moment and taking daily lessons at the nearby Apple store in IconSiam.
