I have read some interesting comments re jaidee's situation.I have to say these rules are really harsh on genuine cases. One point that i would like to discuss further is about posting the application from the uk.

What about the passport doesn't my wife need to send that with the application?

Her visitors visa runs out on 14th Jan i assume she will still have to leave on or before that date? But at least the application will have had a start, better than having to wait the whole 12 weeks out of the uk.

There is nothing stopping your g/f from applying whilst she's in the UK.

Complete the application form and post it to the embassy in Bangkok with a covering letter explaining the circumstances and that you would like them to give your wife an interview date for a time when she'll be back in Thailand. Also say that your g/f will pay, produce her passport and show all of the supporting documents on the date she's interviewed. They should then write back to you with a date for interview. I'd include an e-mail address too in case they want to contact you urgently.
