I usually use a "standard" payg sim (12call) when in Thailand. However this obviously is phone/text only.

Is there a simple option, payg or, preferably, a fixed fee for a week/month of unlimited data?

I shall be in Bangkok & Samui for a month in total and use an HTC Desire.

Both Bangkok(TrueMove/AIS/TOT) and Samui(TrueMove) have 3G. Coverage dependent on where you are staying. Otherwise you are looking at the much slower EDGE connection.

I will be in both Samui & Bangkok, therefore I guess TrueMove will be my best option....

Not necessarily, as TrueMove EDGE is horrible if 3G isn't available. Since the SIM card is only 49 baht it is not a big problem to have more than one card. At the same time, if there is a TRUE WiFi HotSpot nearby you can gain access to the HotSpot for as little as 29 baht per day.
