The sound you hear when the wheels drop is the hydraulics........

Not likely. It is more likely to be the wind turbulence caused by the movement of the landing gear as it moves into position. The movement of the gear blocks the path the air was taking and causes it to whirl and swirl about. Once the landing gear is fully down the air can resume a smooth (and less noisy) flow. The hydraulic noise is barely noticeable to the passengers on a commercial aircraft due to the soundproofing on the plane. And you would hear the noise again as the spoilers were deployed a few minutes later if it was the hydraulics.

The flaps go down and back from the trailing edge of the wing, essentially maker the wing bigger (for more lift at low airspeed, aka landing). The airbrakes/spoilers are on top of the wing, and go up to block the air and slow the plane. You definitely hear the flaps come down, but not the spoilers go up. The flaps coming down have a unique sort of sound, that is not like the landing gear coming down sound.
