Regarding written proof of address from our friends in immigration, do we just roll up and request it with our tea money or do I need to show them something with my address on, baring in mind my stated address is on my report sip..

They use your reported address and require a 300 baht tip

You need to show them a bill, or letter with the address and your name.

Usually Immigration like to see your rental contract or a copy of your home's Tabian Baan.

your driving license, rear has your address

Do you have Cable TV at home? The invoice might work, as it is probably in your name. Water or Electricity is in the name of the house owner in most cases. If you do 90 days reporting, the paper in your passport might work as well. Otherwise follow LivingInKata's advice.
