We are about to harvest a lot of ginger, not too sure how that happened. Apart from putting it in curries and similar, what else can we do with it? Keep it clean!

Ginger beer didn't work for us last year, candies ginger loses its appeal after a month or two......

Well my bet is, slicing and drying is the best thing before you let it rot away.

Chop it into small pieces. Sun dry it and then grind it. Ginger powder that will last for a long time in a sealed jar out of sunlight.
