Well, my step son was happy as my wife was too. Cooked Italian tonight with salmon( I use the cooking method, in hot oven 2 minutes and out 2 minutes , ..do it 3 times  ) I also made tomato water with olive oil and pesto for the sauce. Then had grilled eggplant , tomato and olives  sprinkle with Parmigiano reggiano  .now he wants Chinese tomorrow night .He leaves in 5 days .I will miss him

My step son leaves tomorrow and what a week of cooking we had .He is sad to go as he is going to a trade school living in a dorm 

He enjoyed his stat with again as he usually does . We had Teriyaki salmon  which we made sauce ,crumbed chicken with wasabi and mayo sauce ,smoked ell with soy sauce, pickled vegetables and 20190511_181305.thumb.jpg.a3b0da476c4098ed64b0fa2670f8a4f8.jpgrice .The rice was Japanese rice with with a little sticky rice to give it more flavour with a touch of Japanese miron

What kind of wood did you use to smoke the eel?

I would think the Thai beef would smoke up pretty good...

  I smoke all my seafood and chicken in a wok with a lid on it . Make a spice mix of sugar , uncooked rice , and tea and some cinnamon and star anise.I then make a teriyaki sauce from ginger , soya sauce , miron, oil and sugar.

how does the smoke enter the wok? :unsure:

Nam , the ingredients go in the bottom of the wok on top of foil.Turn your wok on and put on high heat , till you see everything is smoking .then put in a steamer tray and put protein  on top .turn down to low heat . put lid on ..

I will take pics next time I do it , maybe with salmon in 2 weeks

I done so much cooking the last 7 days , everything from Australia beef steak to lobster and prawns , duck breasts ,scallops, it was so good . The best dish my step son love the most .....was shepherds pie!!!! I use a fatty minced steak , lamb fillets , and lean steak minced .I add Tabasco sauce , herbs , fresh cooked tomatoes , tomato paste . The potatoes are boiled then mashed with cream and butter . I spread the potato mixture on like canyons, so when I put the cheese on you get rivers of melted cheese .

it might be tasty Kevvy but it's not smoking. without the taste of real smoke from charcoal it's like having sex with a rubber doll... in my [not so] humble opinion. :unsure:

Agreed about the smoking. Not tried a rubber doll yet though so will take your word for it.

Back to normal now as step son has left . Makro have it plus cardamon. Locally you can get cassia bark in those kits sold for making paloor pork in most mom and pop stores.

Won't find many of those on any health farm!

Apparently all that is now good for you, even salt if you sweat loads.

 

The Sheppard's Pie looked great although if beef not lamb it'd be cottage pie.

 

I've been trying my hand at Indian food for a couple of weeks now after your Rogan Josh picture which looked lovely.

 

Done three diffent dishes so far, not too bad, Rogan Josh is next.

 

Inspired by Tutsi I've binned rice, potatoes, pasta in favour of lentils. I'm enjoying lentils, cooked in chicken or vegetable stock.

 

Recipes are from Hari Ghotra and are excellent.

 

I also include home made yoghurt from a recent thread.

lentils are great when ye can find them...I've only been able to find them recently at the indian grocery shop at the Rembrandt Hotel...found some once many years ago at foodland soi 5 but then later nothing...always preferred the green/brown ones as the red ones are only good in a dal...usually use split mung beans for that available everywhere...cooks up the same way...

 

with the diabetes I can manage some tatties on occasion in a stew with beans and veg but I've given up with the rice and pasta as that's like eatin' poison...maybe less than a cup of cooked local jasmine rice with leafy veg cooked with garlic and oyster sauce, the family always has some on the go upstairs in the rice cooker...

My missus reckons you can get yellow lentils anywhere. The Thais use them for making Thai sweets (puddings)?

This lentil stew my grandmother always made.

sour lentil stew:

ingredients
To edit
500 gr lentils, wash in a colander before use
1 bunch of greens with parsley
300 grams of potatoes
250 gr bacon, diced
4 meat ends / cooked sausages
1 small onion
2 tablespoons oil
Salt, pepper, caraway, red wine vinegar


preparation

Fry bacon with oil in a large saucepan until crispy. Add finely chopped onion and fry until glassy. The greens, except the parsley, add finely divided and fry something. Add diced potatoes and lentils, pour in 1 liter of water, 1/2 teaspoon cumin give. Pierce the boiled sausages with a fork and add. Do not salt! Boil 45 minutes to 1 hour (in a pressure cooker only about 10 minutes) simmer in between stirring occasionally. Remove the cooked sausage from the pot and cut into bite-size pieces, then add again. Now season with salt, a little pepper and a good dash of vinegar for a short time. Can also be refined with red wine. Wash the parsley before serving, chop finely and sprinkle over the stew.

yeah, I'd say so...they're easily mistaken for yellow lentils, but they taste different...I use them insteada lentils in a dal and not bad...cooks up the same way, no soaking required but ye gotta rinse them well...available most everywhere...

 

a few years ago I mistook green split peas for green lentils at foodland, clear plastic packaging didn't say what they were on the bag...didn't find out until I got home and looked closer...OK when cooked up with some carrots and pork belly, needed some celery...

By the way, Big C for example has canned brown lentils from Italian brand.
Saves you the hour-long cooking and can also be used to make some lentils salad quickly.
Pressure cooker is good investment in case one likes to eat a lot of pulses.
Works also great for the tough beef here.
