Grumble, grumble...

Bought a good quality gas range with a nice big oven and have searched far and wide for things like meat and oven thermometers, good carving knives, etc..

Took my chances that the manufacturer would actually set the oven temp and baked a turkey today. After four hours of waiting, the ole bird was totally raw in the middle. :o The family filled up on rice and green stuff instead...

Anybody know where I can find quality western style kitchen/chef's supplies in Chiang Mai?

Central at Kaat Suan Kaew has carried some Henkle (sp? German) knives which are good quality. Also saw some of them at RimPing but a smaller selection. Thermometers have been available at both places also. Do not know if they have stock now. With a bit of talking, Central sometimes orders things up from BKK for customers.

There's a kitchen supply shop near the new Royal Peninsula Hotel/Apartments. I forget the name of the road but if you go north from Sripoom corner (the NE corner of the old city) towards Tesco/Lotus on the superhighway, the shop is on the left before the first traffic light. It's a small shop & I haven't been there for a while but I remember being surprised at some of the items they carried.

Oven thermometers in Central. - Bought one today.

The needle type thermometers for checking internal temperature of meat etc. can be bought from chemical supply houses. Pricey but work well. (The one I use has a long lead so I can stick it in and put the digital meter outside the oven. Very easy to see if the meat is cooked without opening the oven door.)

Most other specialist cooks/chef's equipment has to come from Bangkok or be ordered from overseas.

Great response and I am off to Central tomorrow. The internal temp one you use - did you find that at a local chemical supply house in CM? If so, where can I find such a thing? Am also off tomoro to find the kitchen supply place off the NE corner of the moat.

For a small shop, they have an amazing variety of supplies. I looked for a while for meat and oven thermometers and was about to leave but decided to ask. Good thing I did for they were behind the counter and I bought one of each and both are of surprisingly good quality.

Be careful when you purchase Henkles kitchen knives here. There are several lines of them offered, and the vary tremendously.

Look at the logo on the side of the knife. There needs to be stick figures of men there. If there is only ONE stick figure, pass that knife by. Look for the knives that have the twins on the logo. The steel is MUCH better quality. Then find size and shape that feels comfortable in your hand. You really shouldn't need more than two-three good knives; one parer, one medium chef style, and perhaps one large chef style. If you like, and know how to use, a Chinese style cleaver, you can get some great deals on them down at Wararote Market. Just look for the cheapest black steel one that fit's your hand. They make them from old car leaf springs, and those are made of 1095 carbon steel. Take and hold an edge like the best forged blades!! I prefer that to the large chef's blade.
