One of the reasons is that cheese is a living thing and the enzymes in the cheese constantly evolve. A date is chosen where the taste is what is expected of the particular cheese. Cheese can be kept for long periods after this date but the taste may not be what you expect, that doesn't mean it tastes bad only different. Keeping the cheese at too high a temperature causes it to sweat out liquids which can alter the taste even more. Cheese should generally be eaten at room temperature but I think they mean UK room temperature not Thailand. 1
