I am largely vegetarian so I don't get a lot of lipids, oil/fat in my diet. Some is necessary of course.

So I look for full fat milk. It makes a smoother yogurt. But even 1% skim milk can be used. I've never tried soy milk but think it doesn't have enough sugars./fat to make good yogurt. Might be interesting to try though.

 

I abandoned sugar in my early 20`s after reading 'Sugar Blues ' by William Dufty (I think). Shortly after that I turned vegetarian (mostly). I still eat chicken here in Thailand as other proteins such as cheese are expensive, or harder to find such as nuts and whole grains. Truth is I don't really care to live a hundred years.

 

I use 3L of milk each time, making about 8 containers (used yogurt containers). I keep them in the fridge for 7-10 days with no deterioration. Even at low temperatures the culturing continues until virtually all the milk sugar, lactose, is consumed by the bacteria. Naturally their waste product, acetic acid (vinegar) increases proportionally. So it gets more tangy.

 

I have never kept it so long it goes bad, but the curds do slowly clump together and separate from the liquid, but that takes a couple of weeks. Just mix it back up with a spoon and you're good to go again.

 

Sorry I can't tell you how long it takes to go bad, but remember that milk won't make you sick even when it is so old it smells bad. My mother loved buttermilk but I couldn't drink it the day she bought it!

  • Try to find sugar free drinks ( diet coke etc) in a Thai 'attraction'; they just don't stock them.

Crikey. Big cups and tons of sugar. I thought I have a big cup, 2dl and 2 spoons of sugar is just about as sweet as I can handle. That stuff is pure poison.

I use a big cup with a spoon of coconut sugar. I haven't used refined white sugar for more than ten years.

Good start, but not enough, should be bold moves like 100% tax on sugary tripe like Coke. As for packaged fruit juice, one may as well be drinking sweetened, pasteurised sugar water. In two minds? Do yourself a favour: eat an orange and drink a glass of water.  

Or you could add some yeast to packaged fruit juice. That will 'eat' all the sugar and convert it to CO2 and......er..............alcohol.   LOL

Coconut sugar is just as 'bad' for you as normal sugar.

I didn't even know Dr. Pepper was in the UK. Singapore does have it. They even have Diet Dr. Pepper.
