Im currently filling the form in online on behalf of my wife from the UK, she will be returning to Thailand to make the application but we don't know what her mobile number there will be or where she will be staying, is it ok to use my number and our UK address?

No - The application must be made using a Thai address - Maybe you should delay the application until those details are available
