Does anybody know if the bank requires to see evidence of the mortgage deposit at the time of application or will they take your word for it. The reason being is that the cash is in the UK and the exchange rates have just dropped significantly.

OP, surely you would have method to show them proof you have the required funds.

Example bank app which can show your accounts and balances. Easy enough to print out. Just run it past your Thai bank ask what's required. 

BTW may I ask roughly what interest rates banks are charging right now.

I can give my UK bank statement, but It is slightly more complicated.

I am not in Thailand.

The mortgage will be in the wife's name.

Most of the deposit is in my account in the UK.

Possible to just transfer funds into her account? If your not in UK makes it harder.
