anybody know of a restaurant / hotel that are doing Christmas lunch or dinner in Hat Yai. I know from previous experience not much available , but circumstances may change 

Given the current circumstances I suspect even less likely this year. In previous years the Seneha Restaurant at the Centara Hotel has had a Christmas dinner on Christmas Eve, and of course there's The Swan usually has a dinner on Christmas Day. The Swan always required you to book, they'd then order the number of turkeys to suit. 

A large group of us will be having Xmas dinner at the Swan on Boxing day, perhaps you can piggy back on this.
