There is no official document that anyone in the UK would pay any attention to.

The only arrangement that exists for vaccination outside the UK, with respect to entering the UK, is with the EU and US.

I had my first jab in Thailand and went to 2 UK walk in centres, the first wanted proof from Thailand and the second didn't.

I got a an NHS card that indicates I had a second jab but doesn't even have may name on it, far less passport number.

Do not think for a minute your situation is unique to Thailand.
