Teflon is OK, for low temp cooking, and easy cleaning. Do have one small Teflon saucepan, and good for omelet with 'acidic' (tomato) ingredients. Recently bought a nice Stainless Steel skillet, a bit larger than my CI skillet. Advice on buying SS, make sure large / wide enough, so flame of gas burner doesn't go up side of pan. Help with keeping clean & stain free. Gets used for things the CI doesn't like, acidic sauces manly.
